Camper Cooking - Instant Pot Pulled Pork

OK y'all. I LOVE cooking. Like would rather cook something than go out to eat 8/10 times. That being said, I've had to adapt my way of cooking to fit into this tiny home life we have now. Not only that, but I'm also trying to adapt recipes so that it feeds only the two of us. (Leftovers don't work so well when you have a tiny freezer and/or fridge - fridge space is prime real estate!)


One way I've learned to love cooking in a tiny space is with the gift of my Instant Pot (thanks, Ma!). I use this sucker at least twice a day!


So, without further ado, here's the KILLER pulled pork recipe I found and have made like....6 times in the month since I found it. :)

PSA: I *never* actually measure seasonings. No one from Louisiana does. We generally just shake until the spirits of our ancestors say "That's enough, sha."


Ingredients:

1 - 1 1/2 lbs pork tenderloin

1 1/4 cups water

3 tbsp brown sugar

2 1/2 tsp coarse sea salt

2 tsp garlic powder

2 tsp onion powder

2 tsp paprika

1 tsp ground cumin

1 tsp chili powder

1/4 tsp cayenne pepper

1 teaspoon Tony Chachere's


Instructions:

To make dry rub, mix together all spices until well blended. Set aside.

Next pat tenderloin dry with paper towels and cut into chunks. It cooks more evenly and ends up more flavorful if you cut into chunks.

Put tenderloin chunks into dry Instant Pot.

Pour dry rub over and toss to thoroughly coat.

Pour water over everything.

Check Instant Pot O-ring and close lid - set to 'sealing'

Cook on Manual for 30-40 minutes (depending on how much pork you ended up using)

Let it depressurize naturally. (About 20 minutes if I'm remembering correctly)

When pressure is completely released, open the Instant Pot.

Use slotted spoon to remove meat to a large bowl. Shred.

Spoon a few spoonfuls of the yummy liquid gold left in the Instant Pot onto meat and stir.

Serve on hamburger buns with your favorite BBQ sauce, coleslaw and maybe some baked beans.
