I wasn't going to do another recipe quite so soon, but I couldn't help myself when this cobbler I made for Chelsea (her current binge - she calls it crack) came out so pretty!
I'm not sure where this recipe came from originally (other than my mom introduced us to it - thanks ma!), but I've modified it slightly to make less (cooking for 2) and work with my Ninja Cooking System.
If you want to make it work for more people, just double the recipe!
Ingredients: - 1 can pie filling (we find we like apple best)
- 1/2 cake mix (we like yellow - a friend used a spice cake mix and it came out great!)
- 1/2 stick of butter, cut into pats
Directions:
- Pour pie filling into small pan that is compatible with your slow cooker (my Ninja came with a small pan - most likely 8x8 - that works perfectly with this half recipe. If you're doubling, just pour it straight into your slow cooker!)
- Pour cake mix over pie filling, even it out with spoon.
- Place pats of butter evenly over the top of cake mix.
- OPTIONAL: I like to sprinkle a little brown sugar, white sugar, cinnamon and sometimes even crumble a gingersnap cookie or two over the top to give it a little extra oomph.
Put the lid on and cook on high for 2.5 hours. Cooking time should stay the same when doubling recipe, you may just have to check and maybe add 30 minutes if it doesn't quite look done.
Refrigerate leftovers. Enjoy!
